charcoal is my go to. I do not use gas or propane unless at a tailgate as they are easier to transport and less messy. I am a wood guy as well. I combine types of woods together to create unique flavors. I am not however a hickory guy. Use hickory too long into the cooking process and it bitters the meat. It comes down to how much air you allow into the cooking process. Too much air and you are going to cook your food fast (nothing wrong with that) but less air slows the process (good for meats that need to tenderize) so there is never just one right answer.BigJerk » Thu Mar 23, 2023 6:07 pm

You make jerk, sticks, and sausage ? I have a pellet smoker and charcoal grill....
