Never been a fan of chili and have no experience cooking it. Just read that a church down the street is having a chili contest fundraiser in a few weeks and while I figure there will be tons of various chili meals, I have a freezer full of elk that likely others do not and thought Id throw my hat in the ring. my chili is named "the best damn chili I have ever had" because I served it once at a tailgate and a drunk off his ass friend of mine kept mumbling that as he ate it. But to be honest it is pretty damn good. I use a combination of ground chuck (locally sourced pasture fed beef) and ground sausage (same) and yes, for the Texans among us, kidney beans. If you feel like PM me the basic jist of how you do it Id be obliged. Of course if you just want to keep it Attyla's secret best damn chili then I completely understand as well. 1 large onion, diced fine (I use white, but yellow works as well)
2 Bell peppers, diced, and I use a green and a red, but yellow or orange work too. I find the red gives it a great flavor
2 sweet peppers diced fine
4 stalks of celery diced very fine.
Add all of that to a pot and add some oil and cook until softened under medium heat (I use peanut oil, but olive works too)
3/4 pound ground chuck 3/4 pound ground sausage (if you use your elk, add a bit of fat to it so it does not cook up too fast) add to the pot and cook through
7 roma tomatoes and puree them, add to the pot, add in a can of dark kidney beans and tomato sauce until your desired consistency, reduce the temp to med low and cook it for about an hour. Stir on occasion and if you need more tomato sauce, add as needed, if you need to thin it out a bit, beef stock works really well.
Seasonings are a bit random, fresh garlic, absolutely, white pepper, cayenne, chili powder, celery salt. This is all added bits at a time to your desired level of flavor/heat. Red pepper i have added before, and it works well. And of course you can also add in any peppers you want to give it a kick. I really like pablano peppers for this step. I am not trying to make it hot, just flavorful.
The final steps where you are adding in the spices is the trick. Because you are using both spices and peppers, go slow. It is easy to make things hot, it is really hard to reverse it once you go too far.
But after all that, simmer it so it infuses the flavors and serve.

Do that! This is the basic recipe, I play with it a lot. I have added black beans, and pinto beans, both are good. I have subtracted the celery and added in the white part of a green onion (use a food processor if you do that, and you need a decent amount of the tips) all because chili is about the most uniquely North American food there is.Xramfan wrote Fri Apr 12, 2024 7:57 am:Very cool.
