I have never smoked a steak myself. I'm salt/pepper and sear it at a high temp for 2 minutes a side. I use a lot of cherry/apple/ pecan for poultry. Pecan is my go to for ribs. Much better than hickory which ends up creating a bitter flavor. I am getting more and more away from the traditional woods and opting for more cherry or apple woods.

Always wanted to do a brisket but haven't needed to. Been smokin meats for the last few years but it’s time to go back to the old days. Funny, smoked chicken,briskets,tri tip etc made me famous the last few years at my house and neighborhood. And it was grip it and rip it jerky. I have always held a soft spot for that kind of jerky. Rip it and put in in your cheek and let it soften up.
You only find "easy chew" jerky on the shelf. I gave 2lbs of this sliced top round a 36 hour bath in this....

Patted it dry and came over the top with a not too shy sprinkle of cayenne pepper.
I love the sweet heat thing.
Smoked it to the good ol days...... grip and rip jerky. Stick it in the cheek.
Anyone else remember that old style jerky?

I went simple last night, just burgers on brioche. Tonight, BBQ chicken breasts with wild rice and a vegetable of some kind or another. Charcoal again with apple wood chips. The heat broke last night so being outside is far better. We did a heat bubble for 4 days with temps hovering around 99 degrees with high humidity. Nice. Im putting a piece of snapper on with some Squash,onion and Zucchini. Healthy except for the Vodka .
