Brisket went on just after midnight. hit the stall at 170 at 6:30. wrapped in butcher paper. Should be done before noon. Great thing is if its done early you can wrap it in a towel and put it in a cooler and it will stay warm for 4-6 hours. Should not have to we are eating around 1-2. It's crazy. I used to think my fire went out or my thermometer wasn't working . An hour later and it dropped 2 degrees. Have a brisket flat and a rack of ribs going on the pellet.....chicken wings.......smoked then grilled.
